Today was the day to make my annual holiday turkey sausage – a tradition that I started in 1964 and I have made it EVERY YEAR SINCE THEN – really – sometimes it is hard to believe that I have been alive long enough to do this for 45 years – but yes, it is true.

I got the ORIGINAL RECIPE from the DINAH SHORE show – I was 20 years old and newly married – and I was SO excited to make this.  (20 seems so young!!!) To make a long story short, this turkey sausage has now become a family tradition!  It started out as a hamburger sausage but I have made revisions over the years – adding my own spices along the way!  I seem to remember that I used to cook it at 200 for 5 hours – but I have made a little revision on that over time!

I left 30’s Club early today so that I could shop for and make my annual turkey sausage with my grandangel, Sarah.  Here she is holding my basket of spices – she helped me do the mixing and shaping of the turkey logs.  Right now we are enjoying the aroma of the slow cooking sausage and its spices!

I usually make 10 pounds but this year I only made 5 because we end up not eating all of it!

SAO'S TURKEY SAUSAGE ROLLS IN THE OVEN

Sao’s Turkey Sausage (made since 1964)

THIS IS HOT AND SPICY SO IF YOU ARE FAINT OF HEART

 GO EASY ON THE MUSTARD SEED, CRUSHED RED PEPPER AND TABASCO!

 5 lbs turkey sausage (do not use white meat)

1 T dried crushed red pepper

1 T parsley

1 T cilantro

1 T curry powder

1 T chili powder

1 T garlic powder

1 T garlic salt

1 T Boston jerk

1 T mustard seed

1 T oregano

1 T tarragon

1 T rosemary

1 T white pepper

1 T celery salt

1 T 21 season salute

10 drops Tabasco

2 T liquid smoke

2 T teriyaki

2 T soy

2 T worchestershire

2 T Italian dressing

2 T barbecue sauce

 

Roll into mini logs

225 degree oven

Turn and drain every 30 minutes

Takes about 3 hours

 

Cover with aluminum foil – REFRIGERATE. 

Eat cold with crackers – this is a snacking food.

I like HOT THINGS and so I like it as a sandwich with mayonaise!

(IT FREEZES WELL TOO!)

    Hi Shirley,
    I was looking for a way to email you directly but I can’t seem to find that. I believe you have made some quilts for the Johnston-Willis NICU. Is that correct? Both of my children were in the NICU and received quilts from the Country Piecemakers Quilt Guild. In any case, the tag on my daughters quilt says “Shirley Owens”. If you are that Shirley Owens can you send me an email? I would love to get in contact because we would like to have a larger quilt made for our daughter (who is now 2 years old) and it would be so neat to have it done by the same person who made her NICU quilt.
