Annual Turkey Sausage

My grandangel, Sarah, and I made my annual turkey sausage this week.  I CANNOT BELIEVE this tradition has been going on since 1964.  THIS GOT STARTED A VERY LONG TIME AGO.  It started out to be a Dinah Shore recipe that I heard on TV, but she used ground beef.  (Has anyone ever heard of Dinah Shore?)

I have modified the recipe and have added spices to it over the years.  It is such a thrill to be able to pass this tradition on to yet another generation.  Sarah LOVES to cook.  We will make deviled eggs together later.  She always wants us to PRACTICE a few days early – more deviled eggs for her!

Here is my recipe and it is HOT and SPICY…..if you decide to make it and are not into HOT STUFF then cut down on the crushed red pepper, tabasco, and mustard seed!

Sao’s Turkey Sausage (made since 1964)

 

5 lbs turkey sausage (do not use white meat)

1 T dried crushed red pepper

1 T parsley

1 T cilantro

1 T curry powder

1 T chili powder

1 T garlic powder

1 T garlic salt

1 T Boston jerk

1 T mustard seed

1 T oregano

1 T tarragon

1 T rosemary

1 T white pepper

1 T celery salt

1 T 21 season salute

10 drops Tabasco

2 T liquid smoke

2 T teriyaki

2 T soy

2 T worchestershire

2 T Italian dressing

2 T barbecue sauce

 

Roll into about 1/4 pound rolls

250 degree oven

Turn and drain every 30 minutes

Takes about 3 hours
