SAO’s ANNUAL HOLIDAY TURKEY SAUSAGE

Every year before Thanksgiving I make my annual turkey sausage.  I have been making it for a LONG TIME – and it has become a family tradition.  Originally I heard about this on the DINAH SHORE SHOW (on TV) but she used hamburger and fewer spices.  I have added and revised this over the years and this year I made a few more modifications…..(because the truth is I don’t enjoy following directions even when they are my own.  LOL!)

Sao’s Annual Holiday Turkey Sausage (made since 1964)

 

6 lbs ground turkey (do not use white meat)

1 T dried crushed red pepper (leave out if you do not want it HOT!) This year I used ½ T

1 T parsley

1 T cilantro

1 T curry powder

1 T chili powder

1 T garlic powder

1 T garlic salt

1 T Boston jerk

1 T mustard seed (use 1 t if you do not want it HOT!)This year I used  ½ T

1 T oregano

1 T tarragon (or 1 T Thyme if you run out of tarragon.  J)

1 T rosemary

1 T white pepper (fresh ground black pepper is fine)  I like the FRESH BLACK PEPPER BETTER

1 T celery salt (or 1 T Steak Rub if you run out of celery salt.  J)

1 T 21 season salute

1 T  Ginger

1 T  Onion Powder

1 T Lawry’s Seasoned Salt

1 T Dill

1 T Cumin

1 T Basil

10 drops Tabasco  (This year I used the green because it is milder than the red.)

2 T liquid smoke

2 T teriyaki

2 T soy

2 T worchestershire

2 T Italian dressing

2 T barbecue sauce

 

 

Mix all of the dry ingredients together

Slowly stir the dry ingredients into the ground turkey (mixing frequently)

Mix all of the liquid ingredients together

Pour in the liquid ingredients and mix thoroughly

 

Roll into small logs

250 degree oven

Turn and drain every 30 minutes

Takes about 3 hours

 

It has been in the oven almost an hour now and the whole house smells yummy!
